Natural colourings

Natural fruit colourings
The colouring agents naturally contained in fruits of intense colour are extracted from them in their pure form.
The most intensely coloured product is Rubini®, which is produced from elderberry.
They are used in the food and health sector as highly standardised products.

Use

  • in the health sector as a natural source of anthocyanins,  for instance Rubini capsules
  • in the food sector to colour fruit preparations, beverages, nectars, sweets, ice cream, jams, alcoholic drinks etc.

Production process of Rubini
Rubini is obtained from elderberry juice: by using special membranes, water and a small part of sugar, fruit acid and minerals are separated from the resulting juices while all macromolecular substances like aroma, colour, amino acids, polyphenols and partly other medium-sized substances such as sugar, fruit acid and minerals are concentrated.

The production of RUBINI is based on a purely mechanical method: during the production cycle no chemical process occurs, no foreign substances are added and no change in the molecular structure and in the configuration occurs.
Rubini is therefore a product of purely natural origin, which can be defined a "fruit concentrate".
